Leading Belgian chocolate manufacturer Barry Callebaut spent more than 10 years developing Ruby chocolate which they launched in Europe in mid 2018. Made from the Ruby cocoa bean, it has an intense fruity flavour and a natural pink/red colour.
“The fourth type in chocolate offers a totally new taste experience, which is not bitter, milky or sweet, but a tension between berry-fruitiness and luscious smoothness. To create Ruby chocolate no berries or berry flavour, nor colour, is added.”
We’ve used this innovative new chocolate to make a classic Cinderella style shoe. We keep the decoration minimal to show the natural colour of the chocolate to better effect. We’ve just added a little gold lustre dust to the one in the photograph for some extra glamour.
Ruby chocolate contains sugar, cocoa butter, skimmed milk powder, whole milk powder, cocoa mass, emulsifier: soy lecithin, acid: citric acid, natural vanilla flavouring.
